As I’ve told y’all before, my mother was an excellent cook and made sure to teach me her ways.
As the holidays approach, I’m getting excited about all the things that I’ll share on my family table because of what my mom prepared for us over the years. Our holiday table has always overflowed with a mix of West Indian Culture and American Cuisine. Chow mein is presented next to fried chicken. The green beans, sit next to the pepper-pot (oxtails). The homemade yeast rolls keep the pumpkin bread company. And the greens will be lip-smacking good because they are delish, yes, but also because my mother may have added a little West Indian pepper that sets your mouth on fire.
One of my all-time favs to share during the holidays? Nonny’s famous pumpkin bread!
I have wonderful memories of my mother’s cooking wafting into my room in the wee hours of the morning on a regular basis. This was especially true during the Christmas season (my mother IS Mrs. Claus). She’d be up very late and again very early, making sure that holiday memories were made.
This particular recipe is an Evans family favorite, and I love getting to make this tasty bread and recreate the beautiful aroma and memory in my home for my family.
This pumpkin bread has made two appearances at our house. It can show up as loaves or as muffins. Loaves are the traditional way to make the bread. I experimented with muffins once, and because they cook faster, we have found these to be fun as well. I love the sound of my littles asking for “Punkin Bed” 🙂
Recipe
- 2 cups Pumpkin (1 15oz can will do)
- 1 cup oil (I have been using vegetable)
- 3 cups of sugar (gotta find a substitute)
- 4 eggs
- 3 1/4 c flour (I have substituted freshly ground wheat for white and it works wonderfully)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp clove powder
- 1 tsp nutmeg
- 2 tsp salt
- 1 tsp cinnamon
Stir dry ingredients together. Then, mix pumpkin, oil, sugar, and beaten eggs in another bowl. Add wet to dry and stir. This will make about 2 dozen muffins or 2 loaves.
Bake at 350 for 20 minutes for muffins and 45 minutes for loaves. I think that it really takes more time than this but this is what I set my timer for before I start sticking the bread with a toothpick checking for doneness. One of these days I’ll figure out exactly how long this takes in my oven 🙂
