Ya’ll I can cook.

Tis’ true.  My mother is an excellent cook and made sure to teach me her ways.

Now that doesn’t always mean that I actually cook.  I try.  I really do.  But with three boys playing sports, and my life of coming and going in and out of town, getting home cooked meals on the table is a challenge.  Most of the time, I just keep it simple.

And I hear about too.

“Spaghetti again?!?!?”

This complaint from my progengy is normally followed by my diatribe about how they should be grateful and how kids in other countries would love to have what they are ungrateful for. Sometimes, threatening follows too. “If you don’t want it then you are more than welcome to excuse yourself from the table but after this meal, the kitchen will be closed until….

Ummm hmmm. I’m that mom.

I’m just not interested in being a short order cook.

AIN’T NOBODY GOT TIME FOR THAT!

That’s not my whole cooking story though.  When I have the bandwidth to be a little more creative and to take just a tad more time or put in a little more forethought, I love serving up ridiculously good food to my family.  It’s like a challenge. I want to hunt down a dish or or recipe that will make them excited when they find out I’m cooking it up.

It makes me happy when my people are happy and serving up good food is one way I can bless and nurture the “ties that bind”.

Well, here is one such dish that brings a smile to the face of the people who live in my home. I recently shared a pic on Instagram of a whole stick of butter in a pan — because this recipe does indeed use a whole stick.  If that makes you uncomfortable, get over it.  This goodness is worth it and your family will love you.

There is nothing like the smell of cinnamon and apples in the morning and with the weather getting cooler and the holidays approaching, who wouldn’t want to smell this goodness wafting from the kitchen and throughout your home.

So here you go, help yourself. Don’t count the calories on this. Just count your blessings. Girl, bless yourself, your home, and the people you love with this yummy treat.

While I do add a flair or two of my own wrist — an extra dash of cinnamon, maybe a drip or two of vanilla, and more or less sugar depending on how I feel — this recipe comes courtesy of AllRecipes.com and I’m reposting here with a link to the originally posted recipe should you want to read all of the other variations that a bunch of people have added.

Ingredients:

1/4 cup butter
4 large tart apples – peeled, cored and sliced 1/4 inch thick
2 teaspoons cornstarch
1/2 cup cold water
1/2 cup brown sugar

Directions:

In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes. Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.
