Let me share my recipes!
Now let me say first of all that none of these are recipes to enjoy on a daily basis if you are fighting the #fatdemon.
But an occasional treat won’t hurt.
Nonny’s Famous Pumpkin Bread
I have wonderful memories of my mother’s cooking wafting into my room in the wee hours of the morning on a regular basis. This was especially true during the Christmas season (my mother IS Mrs. Claus). She’d be up very late and again very early making sure that holiday memories were made.
This particular recipe is an Evans family favorite and I’ve finally learned from my Mom the art of making this tasty bread and recreating this beautiful aroma and memory in my home and for my family.
This pumpkin bread has made two appearances at our house. It can show up as loaves or as muffins. Loaves look are the traditional way to make the bread. I experimented with muffins once and because they cook faster, we have found these to be fun as well. I love the sound of my littles asking for “Punkin Bed” 🙂
2 cups Pumpkin (1 15oz can will do)
1 cup oil (I have been using vegetable)
3 cups of sugar (gotta find a substitute)
4 eggs
3 1/4 c flour (I have substituted freshly ground wheat for white and it works wonderfully)
1 tsp baking powder
1 tsp baking soda
1 tsp clove powder
1 tsp nutmeg
2 tsp salt
1 tsp cinnamon
Stir dry ingredients together. Then, mix pumpkin, oil, sugar, and beaten eggs in another bowl. Add wet to dry and stir. This will make about 2 dozen muffins or 2 loaves.
Bake at 350 for 20 minutes for muffins and 45 minutes for loaves. I think that it really takes more time than this but this is what I set my timer for before I start sticking the bread with a toothpick checking for doneness. One of these days I’ll figure out exactly how long this takes in my oven 🙂

I love pumpkin bread Chrystal!! I’m going to try this one. Have you tried substituting agave or agave nectar (pretty reasonable at Trader Joe’s) instead of sugar. It’s a liquid (looks like honey). I use it in place of sugar in almost everything (coffee, sweet tea (smile), candied yams (sweet potatoes casserole), etc. No one in my family has rejected it yet. It breaks down in your body differently than sugar does. Some people don’t agree, but my waistline is telling a different story!
Yes! We have definitely used Agave Nectar to sweeten before! I’ll admit I got a bit confused when reading all of the opinion of whether or not Agave was a better solution or not and I got discouraged from spending the extra money to get it!
We’ve also tried applesauce as an alternative but haven’t figured out how to adjust the moisture content of the recipe so that it all balances out 🙂
That’s interesting, Lisa. My downfall is sweets so I welcome anything that gives me the flavor without the consequences! 🙂
I left two blogs – I misread the first time – thought I was suppose to write about a topic from the week and then add a recipe to it. Then I realized that I was suppose to do the “recipe” topic.

Good Morning All, I just updated my blog and added a very important ingredient to the cabbage soup. I knew I forgot something too. I went back to it a few times over the last couple of days with a feeling like something is missing. Sure enough, it was the vinegar. Vinegar, btw, is great for a lot of things. (You probably already knew that.) Please revisit my blog if you were interested in the Cabbage Soup or simply add vinegar to the water at the time you add the cabbage. I usually just pour until it feels right. Have a great day y’all (smiles).

Ya’ll today I’ve been blessed with two lovely recipes that have my mouth absolutely watering! Lord willing, I plan on making the pumpkin bread (my husband will demand it have frosting). I’ll need to get more apples so I can make the sauteed apple recipe. After almost 43 years of marriage, Lord forgive me but this PK (preachers kid) has developed an allergy to the kitchen and cooking specifically BUT if anyone has a good recipe for mac/cheese PLEASE SHARE! Thanks ahead of time!
